- Ingredients -
- Method - Trim the cucumber and cut into 1 inch lengths, then cut each peice lengthways into thin slices.Place in a bowl and sprinkle with sea salt. Rinse the cucumber slices under cold water and dry.Quarter the cherry tomatoes and place in a bowl with the cucumber slices. Whisk the lemon rind, juice, pepper jelly, chilli flakes, dill and garlic together.Season and pour over the tomato and cucumber. Toss and leave for 20 minutes before serving. |

- Method - Put the oil in a wok or round bottomed pan and place on the heat. Once the oil is hot add the chicken pieces and begin to stir. Allow the meat to seal. Now add the Jerk seasoning, 1 tsp per person. Keep turning until the meat is cooked. Serve with rice and peas or a crisp salad and fresh mango salsa. For a BBQ version marinate the meat in Jerk seasoning overnight and cook over hot coals on the barbecue for 30 minutes, turning occasionally. |
